Okay, so I know it’s Wednesday, and I am way behind on this,
but here we go. This last weekend had
its ups and downs. Saturday started out
strong with a run and a board meeting, but I let myself derail after that. Once I got home from the meeting, Jeff and I
watched the KU men’s basketball game, and I decided it would be okay to drink a
beer. Yes, I had set the goal, as
mentioned previously, of not drinking until Christmas, but I let myself
slip. As always, this led to other bad
decisions being made. Once again I was
weak, but I was determined not to let this slip continue into the next few
days. Sunday I was back on track, and
did some fun cooking for the week. I
have been roasting pumpkin seeds pretty frequently, and used the same method to
roast some squash seeds.
I made a Vegetarian
Bolognese with Whole Wheat Penne for my lunches this week. Yum!
And, of course, cookie baking HAS to take place this time of
year. This weekend we made Chocolate
Peanut Butter Cookies and Chai Shortbread,
both Cooking Light recipes from previous December issues. Sunday night’s dinner
consisted of Sweet
Potato Quinoa Burgers with the Cilantro Lime Mayo from this
recipe and avocado, plus homemade Oven Fries on the side. I made four burgers and froze two for a later
meal. A super tasty meal!
My running continues to be going strong. Here is a picture of the path I run on my week day runs around Green Lake.
